Organic Greek Oregano

The Greek Sunday dinner: beef slowly braised in tomato sauce – with cinnamon, bay leaf and, at the very end, a pinch of oregano from our fields.
Kokkinisto means “the reddish one” – after the tomato sauce in which the meat braises until it almost falls apart. The kritharaki cook right in the pot at the end and soak up all the sauce. That is what our Dish of the Month is about: a recipe from our kitchen every month, honest home cooking with aromaneo herbs in focus.
To be honest: this dish works without our herbs too – with whatever you have in your cupboard. We just want to deliver the cherry on top.

Brown the meat well on all sides in the olive oil in a heavy pot, then take it out.
Soften the onions and garlic in the pan juices, briefly fry the tomato paste and deglaze with the red wine.
Add the passata, cinnamon, bay leaves, allspice and the meat. Cover and simmer gently for about 1.5 hours until the meat is tender.
Stir in the hot water and kritharaki and cook for 15–20 minutes until soft, stirring now and then.
Finally sprinkle over the oregano, season with salt and pepper and serve hot.
